It's worth noting that the mute button and volume buttons only work when you're actively using the headset, so don't panic if it doesn't seem to work straight away. In Teams, it even syncs up the mute button in the app! I changed this to "Headset", disabled the "Headphones" device, and now I can mute the mic when I'm on calls.
